We love the minions in my family. This summer, my family made a three-generation trip to see the Minions movie in the theater on opening day and it was hilarious. Lemon Blueberry Trifle recipe for movie night

A large portion of the Minions movie is set in Great Britain, so when we watched it, we made it into a theme night, starting with a dinner that you’d have in an English pub: fish and chips, with a side of peas. We enjoyed the oven version of fish and chips and while not as amazing as they are across the pond, it made for a fun and festive meal that minion Dave joined in on.

I wanted a dessert that fit with the British theme and brought the fun of Illumination Entertainment’s Minions to the last course. The minions may love bananas, but my daughter definitely does not, so I came up with a sweet treat that pleases all family member: lemon blueberry trifle!

Trifle is a traditional English dessert that consists of layering cake with jam or jelly, custard or cream, so it fit with the theme. In addition, lemon and blueberry are not just a delightful taste treat, they made our dessert yellow and blue, the colors of our favorite characters!

It’s a really bright and light dessert that makes people smile – just like the minions. The bright citrus of the lemon will be a nice change from some of the heavier flavors of winter.

LEMON BLUEBERRY TRIFLE RECIPE

This trifle consists of layering pieces of lemon cake with whipped cream, lemon curd, and blueberries. If you want to make it the fast way (because no one has a lot of extra time, especially during the holidays), use boxed lemon cake mix and purchase your whipped cream and lemon curd from the grocery store. (And please, feel free to do so, you can find some amazing options at the store and save time.)

Lemon Cake Recipe

Ingredients

  • Vegetable oil,
  • 2 tablespoons all-purpose flour
  • 2 cups all-purpose flour (about 9 ounces)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup nonfat buttermilk
  • 2 tablespoons finely grated lemon rind
  • 2 tablespoons fresh lemon juice

Instructions

1. Preheat oven to 350°. Spray 2 8-inch round cake pans liberally with cooking spray.

3. Combine dry ingredients –  2 cups flour, baking powder, baking soda, and salt – with a whisk.

4. Cream granulated sugar and 1/2 cup butter in a large bowl with a mixer at medium speed until well blended (about 5 minutes). Add eggs one at a time, mixing well after each addition. Add flour mixture and nonfat buttermilk alternately to sugar mixture, beginning and ending with the flour mixture. Beat in 2 tablespoons lemon rind and 2 tablespoons lemon juice.

5. Pour batter into prepared pans. Bake at 350° for 32 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes on a wire rack; remove from pans and continue cooling cakes on wire rack.

Ingredients

4 large lemons, zested and juiced (a little over 1/2 cup)
1 cup granulated sugar
5 egg yolks
1/2 cup unsalted butter

Instructions

1. In a medium bowl, combine lemon zest and sugar. Rub together with your fingers until fragrant.

2. Put the lemon zest and sugar mixture, lemon juice, egg yolks, and butter in a medium heavy-bottomed saucepan and stir until combined. Cook over medium-low heat, stirring constantly, until the butter melts and the mixture thickens, about 10-12 minutes. The lemon curd will continue to thicken as it cools.

3. Remove the pan from the heat and pour lemon curd into a jar or glass bowl. Press a piece of plastic wrap directly against the curd so it is airtight. Cool to room temperature and then place in the refrigerator. Again, the curd will thicken up after it is completely cooled.

Once you have all your ingredients, the real fun begins!

Layering the trifles is pretty cool. I used individual trifle bowls, but you can also put the into one large trifle bowl and serve from there. Both look lovely, I just thought the mini version seemed a bit more minion-like.

Break the cake into pieces. You can cut it neatly, or you can have your kids break it into pieces (we all know that will turn into “rip it to pieces” but I’m inspired by the British to try to keep a bit of decorum here) with their hands, and put those in the bottom.

Add in some lemon curd. (If it’s thick, I microwave it for a few seconds so it spreads out a bit more.)DSCN0738
Top with blueberries, and then start the process over again.DSCN0740These trifles are little, sweet, tart, and fun – just like our favorite little yellow characters in the Minions movie! Grab a spoon and the remote and enjoy both!
